- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tablespoon ube extract
- 1 teaspoon vanilla extract
- 1 1/2 cups mini marshmallows
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream the butter with both sugars until light and fluffy. Add eggs, ube extract, and vanilla extract. Mix well.
- Gradually add dry ingredients into wet ingredients. Stir until dough forms.
- Gently fold in mini marshmallows using a spatula.
- Scoop dough into balls and place on the baking sheet, 2 inches apart.
- Bake for 10–12 minutes or until edges are set and centers are puffed.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
