  • ½ teaspoon black pepper
  • 2 cups egg noodles
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, and sliced celery. Sauté until they begin to soften, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the turkey or chicken broth to the pot and bring to a boil.
  5. Stir in the shredded turkey, dried thyme, dried parsley, and black pepper. Taste and adjust the salt if needed.
  6. Once boiling, add the egg noodles to the pot. Reduce the heat and simmer for about 10 minutes, or until the noodles are tender.
  7. Remove from heat and let it sit for a few minutes. This allows the flavors to meld.
  8. Ladle the soup into bowls and garnish with fresh parsley if desired.
