- 4 boneless, skinless chicken breasts
- 1 cup ripe mango, pureed (fresh or frozen)
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Sliced green onions, for garnish
Instructions
- In a bowl, mix the mango puree, soy sauce, honey, rice vinegar, minced ginger, and minced garlic. Stir until well combined.
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat the vegetable oil and sesame oil over medium-high heat until shimmering.
- Add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until golden brown and cooked through.
- In a small bowl, mix the cornstarch and water to create a slurry. Once the chicken is cooked, pour the mango glaze into the skillet.
- Bring the sauce to a simmer. Add the cornstarch slurry to the glaze and stir until the sauce thickens, about 2-3 minutes.
- Once the sauce has thickened, toss the cooked chicken in the glaze until well coated.
- Remove from heat and let the chicken rest for a few minutes. Garnish with fresh cilantro and sliced green onions before serving.
