Ingredients

  • 8-ounce block of cream cheese
  • 1 tablespoon BBQ rub or seasoning
  • 1 teaspoon olive oil (optional)
  • 1 tablespoon chopped fresh herbs or scallions (optional, for garnish)
  • Crackers, chips, or vegetables (for serving)

Instructions

  1. Preheat your smoker or grill to 225°F using indirect heat.
  2. Place the unwrapped cream cheese on a foil pan or grill-safe dish.
  3. Lightly brush with olive oil, if using. Score the top of the block in a crisscross pattern with a knife.
  4. Sprinkle BBQ rub evenly over the top and sides of the cream cheese.
  5. Place the dish in the smoker and cook for 2 hours until golden and soft.
  6. Remove from smoker, let rest 10 minutes, then garnish with herbs or scallions.
  7. Serve warm with crackers, chips, or veggies.
