Description

Slow Cooker Chicken Alfredo with Broccoli is a creamy and delicious meal that’s easy to prepare.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 4 cups broccoli florets (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 pound fettuccine or pasta of choice
  • Optional: Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning, then place them in the slow cooker.
  2. Scatter the broccoli florets over the chicken in the slow cooker.
  3. In a mixing bowl, combine heavy cream, chicken broth, minced garlic, and half of the Parmesan cheese. Stir until well blended.
  4. Pour the mixture over the chicken and broccoli in the slow cooker.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  6. About 20 minutes before serving, cook the fettuccine according to package instructions. Drain and set aside.
  7. Once cooked, remove the chicken from the slow cooker. Shred it using two forks and return it to the slow cooker.
  8. Stir in the remaining Parmesan cheese until melted and creamy.
  9. Add the cooked pasta to the slow cooker and gently mix until well coated with the sauce.
  10. If desired, garnish with fresh parsley before serving.
