  • 1.5 pounds boneless, skinless chicken breasts
  • 4 medium pitas
  • 2 cups mixed bell peppers (red, yellow, green), sliced
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • ½ cup ranch dressing
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine olive oil, garlic powder, onion powder, paprika, cumin, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let it sit for about 10 minutes.
  3. On a sheet pan, spread out the sliced bell peppers and red onion. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  4. Place the marinated chicken breasts on the same sheet pan with the vegetables.
  5. Place the sheet pan in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. While the chicken and vegetables are baking, mix the ranch dressing with chopped parsley, dill, and lemon juice in a small bowl.
  7. Once the chicken is done, remove it from the oven. Let it rest for a few minutes, then slice the chicken into strips.
  8. Open each pita and fill it with a generous amount of the roasted vegetables, sliced chicken, cherry tomatoes, and spinach.
