- 1.5 pounds boneless, skinless chicken breasts
- 4 medium pitas
- 2 cups mixed bell peppers (red, yellow, green), sliced
- 1 medium red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- ½ cup ranch dressing
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine olive oil, garlic powder, onion powder, paprika, cumin, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let it sit for about 10 minutes.
- On a sheet pan, spread out the sliced bell peppers and red onion. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Place the marinated chicken breasts on the same sheet pan with the vegetables.
- Place the sheet pan in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- While the chicken and vegetables are baking, mix the ranch dressing with chopped parsley, dill, and lemon juice in a small bowl.
- Once the chicken is done, remove it from the oven. Let it rest for a few minutes, then slice the chicken into strips.
- Open each pita and fill it with a generous amount of the roasted vegetables, sliced chicken, cherry tomatoes, and spinach.
- Drizzle the herby ranch sauce over the filled pitas for added flavor.
