- 4 chicken thighs, bone-in and skin-on
- 4 slices of bacon, chopped
- 2 shallots, finely diced
- 3 cloves of garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set it aside, leaving the drippings in the skillet.
- Season the chicken thighs with salt and black pepper. In the same skillet, add the chicken, skin-side down, and brown for about 5-7 minutes on each side. Remove from the skillet and set aside.
- Add the diced shallots to the skillet and sauté for 2-3 minutes until they become translucent. Then, add the minced garlic and cook for an additional minute.
- Pour in the chicken broth and scrape any browned bits from the bottom of the skillet. Bring to a simmer.
- Return the browned chicken and crispy bacon back to the skillet. Add the heavy cream and dried thyme, stirring gently to combine.
- Cover the skillet and let the mixture simmer for about 20-25 minutes, or until the chicken is cooked through and tender.
- Once cooked, garnish with fresh parsley and serve hot.
