Description
Italian Torrone is a classic soft nougat candy packed with toasted almonds and pistachios, sweetened with honey, and flavored with a hint of citrus.

- 2 large egg whites
- 1 cup honey
- 1½ cups granulated sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1½ cups toasted almonds
- 1 cup toasted pistachios
- 1 teaspoon orange zest
- Wafer paper or parchment (enough to line top and bottom)
Instructions
- Prepare a loaf pan by lining it with parchment or wafer paper and set aside.
- In a saucepan, combine honey, granulated sugar, and water. Cook over medium heat until the mixture reaches 280°F (soft crack stage) using a candy thermometer.
- While syrup heats, beat the egg whites with salt in a stand mixer until stiff peaks form.
- Slowly pour hot syrup into the whipped egg whites while mixing on low speed. Increase to high and beat until thick, glossy, and slightly cooled (about 10 minutes).
- Fold in vanilla extract, orange zest, almonds, and pistachios.
- Quickly spread the nougat into the lined pan and press flat. Cover the top with another sheet of parchment or wafer paper.
- Let it set at room temperature for at least 3 to 4 hours or overnight until firm.
- Remove from the pan, trim the edges, and slice into bars or squares.
