- 4 medium apples (such as Granny Smith or Honeycrisp), peeled and diced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 8 small flour tortillas
- 2 tablespoons unsalted butter, melted
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- Cooking spray
- Optional: powdered sugar for dusting
Instructions
- In a large mixing bowl, combine the diced apples, granulated sugar, cinnamon, and lemon juice. Mix well to coat the apples evenly.
- Microwave the flour tortillas for about 15 seconds to make them pliable.
- Lay a tortilla flat on a clean surface. Spoon about 2-3 tablespoons of the apple filling onto the center of the tortilla.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
- Using a pastry brush, lightly coat the exterior of each taquito with melted butter.
- In a small bowl, mix together the brown sugar and vanilla extract. Sprinkle this mixture over the taquitos.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Place the taquitos in the air fryer basket in a single layer. Spray lightly with cooking spray. Air fry for 10-12 minutes or until golden brown and crispy.
- After removing them from the air fryer, let the taquitos cool for a few minutes before serving.
- If desired, dust the taquitos with powdered sugar for an extra touch of sweetness.
