- 1 pound flank steak or sirloin
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups cooked rice (white or brown)
- 1 cup queso cheese sauce
- 1 cup diced tomatoes (fresh or canned)
- ½ cup chopped green onions
- ½ cup shredded cheddar cheese
- Fresh cilantro for garnish (optional)
Instructions
- Begin by slicing the flank steak or sirloin into thin strips.
- In a bowl, combine garlic powder, onion powder, chili powder, salt, and pepper. Toss the steak strips in this mixture to coat evenly.
- In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steak strips.
- Sear the steak for about 3-4 minutes or until browned and cooked to your desired level of doneness. Remove from the skillet and set aside.
- In the same skillet, add the cooked rice and stir to combine with any remaining juices from the steak.
- Pour in the queso cheese sauce over the rice and stir until everything is well combined and heated through.
- Add the diced tomatoes and stir gently to mix. Allow it to cook for an additional 2-3 minutes.
- Return the cooked steak to the skillet, stirring to combine everything together.
- Sprinkle the shredded cheddar cheese on top and cover the skillet, allowing the cheese to melt for about 2 minutes.
- Remove from heat and top with chopped green onions and fresh cilantro if desired.
