Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Stir in the dried thyme and dried parsley, allowing the flavors to meld with the vegetables.
  4. Add the chicken broth to the pot and bring it to a boil.
  5. Once boiling, add the shredded cooked chicken to the pot.
  6. Stir in the egg noodles and cook for about 8-10 minutes, or until the noodles are tender.
  7. Taste the soup and season with salt and pepper as desired.
  8. Reduce the heat and let the soup simmer for another 5 minutes.
  9. Remove from heat and let cool slightly before serving.
