- 3 cloves garlic, minced
- 3 medium carrots, sliced
- 2 stalks celery, chopped

- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the dried thyme and dried parsley, allowing the flavors to meld with the vegetables.
- Add the chicken broth to the pot and bring it to a boil.
- Once boiling, add the shredded cooked chicken to the pot.
- Stir in the egg noodles and cook for about 8-10 minutes, or until the noodles are tender.
- Taste the soup and season with salt and pepper as desired.
- Reduce the heat and let the soup simmer for another 5 minutes.
- Remove from heat and let cool slightly before serving.
- Optionally, garnish with fresh parsley for added flavor and presentation.
