- 1/2 cup vegetable or chicken broth
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the Potatoes: Peel and cut the Yukon Gold potatoes into wedges.
- Mix the Marinade: In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
- Coat the Potatoes: Add the potato wedges to the bowl and toss to coat them thoroughly in the marinade.
- Arrange in Baking Dish: Transfer the coated potatoes to a baking dish, spreading them evenly.
- Add Broth: Pour the vegetable or chicken broth around the potatoes in the baking dish.
