- 2 pounds ground beef or turkey
- 1 large onion, diced
- 2 cloves garlic, minced

- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 2 cups beef or vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh cilantro, for garnish (optional)

- Shredded cheese, for serving (optional)
Instructions
- In a large pot or Dutch oven, heat a couple of tablespoons of olive oil over medium heat.
- Add the diced onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are soft, about 5 minutes.
- Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a spoon. Drain any excess fat.
- Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to coat the meat and vegetables.
- Pour in the diced tomatoes, tomato paste, and broth. Stir to combine all ingredients thoroughly.
- Gently fold in the kidney beans, ensuring they are evenly distributed throughout the chili.
- Bring the chili to a boil. Reduce the heat to low, cover, and let it simmer for about 45 minutes, stirring occasionally.
- Taste and adjust the seasoning if necessary. If you like it spicier, feel free to add more cayenne or your favorite hot sauce.
