  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh cilantro, for garnish (optional)
  • Sour cream, for serving (optional)
  • Shredded cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, heat a couple of tablespoons of olive oil over medium heat.
  2. Add the diced onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are soft, about 5 minutes.
  3. Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a spoon. Drain any excess fat.
  4. Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to coat the meat and vegetables.
  5. Pour in the diced tomatoes, tomato paste, and broth. Stir to combine all ingredients thoroughly.
  6. Gently fold in the kidney beans, ensuring they are evenly distributed throughout the chili.
  7. Bring the chili to a boil. Reduce the heat to low, cover, and let it simmer for about 45 minutes, stirring occasionally.
  8. Taste and adjust the seasoning if necessary. If you like it spicier, feel free to add more cayenne or your favorite hot sauce.
  9. Once done, remove the pot from heat and let the chili rest for about 10-15 minutes before serving.
  10. Serve hot, garnished with fresh cilantro, sour cream, and shredded cheese if desired.
