- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 cup broccoli florets
- 1 cup diced carrots
- 1 cup diced celery
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces fettuccine pasta
- Fresh parsley, for garnish (optional)
Instructions
- Start by dicing the vegetables and mincing the garlic.
- Lay the chicken breasts at the bottom of the crockpot.
- Pour in the chicken broth and heavy cream over the chicken.
- Add the broccoli, carrots, celery, and minced garlic to the crockpot.
- Sprinkle Italian seasoning, salt, and black pepper over the mixture.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Approximately 30 minutes before serving, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the crockpot.
- Stir in the fettuccine pasta, cover, and cook for an additional 30 minutes or until the pasta is tender.
- Stir in the grated Parmesan cheese until melted and creamy.
- Taste and adjust the seasonings if needed before serving.
