  • 1 small onion, finely chopped
  • 1 celery stalk, finely chopped
  • 3 garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 3 cups seafood stock or chicken broth
  • 1 cup heavy cream
  • 1/2 pound cooked shrimp, peeled and chopped
  • 1/2 pound lump crab meat, shells removed
  • 1/4 cup dry sherry or white wine
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Set a large pot over medium heat and melt butter.
  2. Add chopped onion, celery, and garlic. Sauté until soft, about 5 minutes.
  3. Stir in flour and cook for 1 minute. Add tomato paste, Old Bay, and paprika.
  4. Deglaze with sherry or wine, scraping the pot. Add stock and bring to a simmer.
  5. Simmer for 10 minutes, then blend until smooth using an immersion blender.
  6. Return soup to pot and stir in cream, shrimp, and crab.
  7. Simmer gently for 10 more minutes. Do not boil.
  8. Season with salt and pepper to taste. Garnish with fresh parsley.
  9. Serve warm with bread or crackers.
