- 1 medium Yellow Onion (diced)
- 6 cups Chicken Broth (low sodium)
- 1 cup Shredded Carrots
- 4 cups Green Cabbage (thinly sliced)
- 1/2 cup Green Onions (chopped)
- 1 tbsp Rice Vinegar
- Salt and Pepper (To taste)
- 2 Beaten Eggs (optional)
- Red Pepper Flakes or Sriracha (optional)
Instructions
- Warm the sesame oil in a large pot over medium heat until it shimmers.
- Add the diced onion, cooking until it’s soft and translucent, about 3-4 minutes.
- Mix in the minced garlic and grated ginger; cook for 1 minute until fragrant.
- Add the ground pork, cooking until it’s browned and crumbly, about 5-7 minutes.
- Add the chicken broth and bring the mixture to a gentle simmer.
- Stir in the shredded carrots, chopped cabbage, and soy sauce; cook for 5-7 minutes until the vegetables are tender.
- Mix in the rice vinegar, then add salt and pepper to taste.
- If using, slowly drizzle in the beaten eggs while stirring the soup gently.
- Ladle the hot soup into bowls, garnishing each with reserved green onions and a sprinkle of red pepper flakes or sriracha.
Notes
- Ground chicken or turkey can be used as a substitute for ground pork.
- Vegetable broth can replace chicken broth for a vegetarian option.
