Bruschetta Grilled Cheese: An Incredible Ultimate Recipe

- 4 slices of rustic bread (such as sourdough or ciabatta)
- 1 cup fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Butter for grilling
Instructions
- In a bowl, combine the diced cherry tomatoes, chopped basil, minced garlic, and olive oil. Season with salt and pepper to taste. Mix well and set aside.
- Take two slices of rustic bread and layer them with sliced mozzarella cheese. Spoon a generous amount of the bruschetta topping on top of the cheese. Place the other two slices of bread on top to form a sandwich.
- In a large skillet, heat a small amount of butter over medium heat until melted.
- Place the sandwiches in the skillet. Cook for about 3-4 minutes on one side until golden brown.
- Carefully flip the sandwiches and add more butter to the skillet if needed. Grill the other side for another 3-4 minutes until the cheese is melted and the bread is crispy.
- Once cooked, remove the sandwiches from the skillet. Let them cool for a minute, then slice in half diagonally for better presentation.
- For an extra touch, sprinkle some additional chopped basil or a drizzle of balsamic glaze before serving.
